Description

This syn-free spicy chicken curry is a flavorful, guilt-free dish that will keep you on track with your Slimming World plan. Tender chicken cooked in aromatic spices, tomatoes, and a touch of creamy yogurt, served with fluffy basmati rice.


Ingredients

  • 4 skinless chicken breasts, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp chili powder (adjust to taste)
  • 1 tsp garam masala
  • 400g canned chopped tomatoes
  • 100ml fat-free plain yogurt
  • Low-calorie cooking spray
  • Fresh coriander leaves, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  • Spray a large pan with low-calorie cooking spray and place it over medium heat.
  • Add the chopped onion and sauté for 5 minutes until soft.
  • Stir in the garlic, ginger, cumin, coriander, turmeric, and chili powder. Cook for 2 minutes, until fragrant.
  • Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
  • Pour in the canned tomatoes, season with salt and pepper, and bring the mixture to a simmer. Cook for 20 minutes until the chicken is cooked through.
  • Stir in the garam masala and cook for another 5 minutes.
  • Remove the pan from heat and stir in the fat-free yogurt. Mix well to create a creamy sauce.
  • Garnish with fresh coriander and serve with fluffy basmati rice or your choice of sides.

Notes

  • Replace chicken with tofu or chickpeas for a vegetarian version.
  • Substitute fat-free yogurt with a dairy-free alternative if needed.
