Description
This syn-free spicy chicken curry is a flavorful, guilt-free dish that will keep you on track with your Slimming World plan. Tender chicken cooked in aromatic spices, tomatoes, and a touch of creamy yogurt, served with fluffy basmati rice.

- 4 skinless chicken breasts, cut into bite-sized pieces
- 1 large onion, finely chopped
- 2 garlic cloves, minced
- 1-inch piece of ginger, grated
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1 tsp chili powder (adjust to taste)
- 1 tsp garam masala
- 400g canned chopped tomatoes
- 100ml fat-free plain yogurt
- Low-calorie cooking spray
- Fresh coriander leaves, chopped (for garnish)
- Salt and pepper to taste
Instructions
- Spray a large pan with low-calorie cooking spray and place it over medium heat.
- Add the chopped onion and sauté for 5 minutes until soft.
- Stir in the garlic, ginger, cumin, coriander, turmeric, and chili powder. Cook for 2 minutes, until fragrant.
- Add the chicken pieces and cook until browned on all sides, about 5-7 minutes.
- Pour in the canned tomatoes, season with salt and pepper, and bring the mixture to a simmer. Cook for 20 minutes until the chicken is cooked through.
- Stir in the garam masala and cook for another 5 minutes.
- Remove the pan from heat and stir in the fat-free yogurt. Mix well to create a creamy sauce.
- Garnish with fresh coriander and serve with fluffy basmati rice or your choice of sides.
Notes
- Replace chicken with tofu or chickpeas for a vegetarian version.
- Substitute fat-free yogurt with a dairy-free alternative if needed.
