Instructions
- Preheat your oven to 275°F (135°C) and line a baking sheet with parchment paper.
- In a clean, dry bowl, beat egg whites until soft peaks form. Gradually add sugar, continuing to beat until stiff and glossy.
- Gently fold in cornstarch, vinegar, and vanilla extract.
- Spoon the mixture onto the baking sheet, forming a circle with a slight well in the middle.
- Bake for 60-75 minutes or until the meringue is crisp on the outside.
- Turn off the oven and leave the pavlova inside to cool for about 30 minutes with the door slightly ajar.
- Once cool, top with whipped cream and fresh fruit before serving.
