  • 200g (7oz) rolled oats
  • 200g (7oz) unsalted butter (or coconut oil for a dairy-free option)
  • 100g (3.5oz) light brown sugar (or coconut sugar for a healthier version)
  • 4 tablespoons golden syrup (or honey, maple syrup, or agave nectar)
  • Pinch of salt
  • Optional add-ins: dried fruits, seeds, nuts, or chocolate chips

Instructions

  • Preheat the Oven: Heat your oven to 180°C (350°F). Grease and line an 8×8-inch baking tin with parchment paper.

  • Melt the Butter and Sweeteners: In a saucepan over low heat, melt the butter, sugar, and golden syrup, stirring occasionally until fully combined and smooth.

  • Mix in the Oats: Remove the pan from the heat and stir in the rolled oats and a pinch of salt until everything is well-coated. If adding extras like dried fruits or nuts, fold them in at this point.

  • Transfer to the Tin: Pour the mixture into the prepared baking tin, pressing it down firmly with a spoon to ensure an even layer.

  • Bake: Place the tin in the oven and bake for 20-25 minutes, or until the edges are golden brown.

  • Cool and Slice: Allow the flapjacks to cool in the tin for about 10 minutes, then lift them out using the parchment paper and transfer to a wire rack to cool completely. Once cooled, slice into squares or bars.

Notes

  • For chewier flapjacks, bake for 20 minutes. For a crispier texture, leave them in for the full 25 minutes.
