Description

Easy and Fun to Make!

Hi everyone! This easy fairy cake recipe is perfect for any occasion, and it’s a family favorite. These small, light, and fluffy cakes, often mistaken for cupcakes, are quick to make and offer endless decoration possibilities. Whether you’re a beginner or an experienced baker, this recipe is sure to impress.

Ingredients

Scale
  • 100g softened butter (room temperature; substitute with margarine for a dairy-free option)
  • 100g caster sugar
  • 2 large eggs (room temperature)
  • 100g plain flour (or use self-raising flour and omit the baking powder)
  • 1 tsp baking powder (only if using plain flour)
  • 1 tsp vanilla extract (optional but recommended)
  • 2 tbsp milk (to help achieve a smooth batter; any type works, including plant-based options)

Instructions

  • Preheat the oven:
Preheat your oven to 180°C (350°F). Line a 12-hole muffin tin with small fairy cake cases.

  • Cream the butter and sugar:
In a large bowl, beat the softened butter and caster sugar together until pale and fluffy. This step should take 3-4 minutes with an electric mixer.

  • Add eggs and vanilla:
Beat in the eggs one at a time, ensuring each egg is well mixed before adding the next. Stir in the vanilla extract for added flavor.

  • Sift in the flour:
If using plain flour, sift the flour and baking powder into the mixture. Gently fold the flour into the butter mixture using a spatula to avoid overmixing.

  • Stir in the milk:
Add the milk to create a smooth and soft batter. This will make it easier to spoon into the cases.

  • Fill the cake cases:
Divide the batter evenly among the fairy cake cases, filling each about two-thirds full.

  • Bake:
Bake in the preheated oven for 15-18 minutes until golden brown and the cakes spring back when gently pressed.

  • Cool:
Let the cakes cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. They are now ready for decoration

  • Decoration Ideas

    • Simple Icing Glaze: Mix icing sugar with water or lemon juice and drizzle over the cakes. Add sprinkles for a fun look.
    • Buttercream Swirl: Pipe swirls of buttercream on top and customize with food coloring or flavorings.
    • Chocolate Ganache: Top with a rich chocolate ganache and a sprinkle of sea salt for a gourmet touch.

Notes

  • Use room temperature ingredients: This ensures better mixing and a smooth batter.
  • Fold gently: To avoid dense cakes, fold the flour into the butter mixture gently.
  • Decorate creatively: Ice with buttercream, simple glaze, or even melted chocolate for a beautiful finish.
