Description

This creamy leek and potato soup is the perfect comfort food for chilly days. With its smooth texture and warm flavors, it’s a classic dish loved by many. The blend of sweet leeks and creamy potatoes creates a satisfying meal that will warm your heart and body. Simple to prepare, it’s a go-to recipe for an easy, cozy dinner.

Ingredients

  • Leeks: Cleaned and thinly sliced (substitute with onions or shallots for a different flavor)
  • Potatoes: Yukon Gold or Russet potatoes, diced (for a chunkier texture, use waxy potatoes like red or new potatoes)
  • Butter: For sautéing (replace with olive oil or plant-based butter for a vegan option)
  • Onion: Diced
  • Garlic: Minced
  • Vegetable or Chicken Stock: Use vegetable stock for a vegetarian or vegan version
  • Heavy Cream or Milk: Optional for added creaminess (replace with coconut milk or cashew cream for dairy-free)
  • Fresh Thyme: For seasoning (substitute with rosemary or parsley if preferred)
  • Salt and Black Pepper: To taste

Instructions

  • Prepare the Leeks and Potatoes: Clean the leeks by removing the tough outer layers, slicing them into thin rounds, and rinsing thoroughly under water to remove any dirt. Peel and dice the potatoes into even-sized pieces.
  • Sauté the Leeks: In a large saucepan, melt the butter over medium heat. Add the sliced leeks and diced onion, cooking until soft and translucent, about 5-7 minutes. Add the minced garlic and cook for an additional minute.
  • Add Potatoes and Stock: Add the diced potatoes to the pot along with the vegetable or chicken stock. Bring to a boil, then lower the heat and let it simmer for 15-20 minutes until the potatoes are tender.
  • Blend the Soup: Use an immersion blender or carefully transfer the soup to a regular blender. Blend until smooth and creamy. If using, stir in the heavy cream or milk, and season with salt and black pepper.
  • Simmer and Serve: Let the soup simmer for a few more minutes to ensure all flavors are combined. Serve hot with garnishes like chopped chives, croutons, or a drizzle of cream.
