For the Bangers:

  • 4 pork sausages (such as Cumberland or Lincolnshire)

For the Mash:

  • 2 pounds Yukon Gold or Russet potatoes, peeled and cubed
    • Substitute: Half potatoes, half cauliflower for a lower-carb mash
  • 3 tablespoons butter
  • 1/2 cup milk, warmed
  • Salt and pepper, to taste

For the Onion Gravy:

  • 1 large onion, thinly sliced
  • 2 tablespoons butter or olive oil
  • 1 tablespoon flour
  • 1 1/2 cups beef or chicken broth
  • 1 teaspoon Worcestershire sauce
  • Fresh thyme (optional)
  • Salt and pepper, to taste

Instructions

  • Prepare the Mashed Potatoes:
    • Boil the cubed potatoes in a large pot of salted water until tender, about 15-20 minutes. Drain well.
    • While still warm, mash the potatoes with butter and warm milk until smooth. Season with salt and pepper to taste.
  • Cook the Sausages:
    • In a skillet over medium heat, cook the sausages until browned and cooked through, about 8-10 minutes, turning occasionally. Set aside and keep warm.
  • Make the Onion Gravy:
    • In the same skillet, melt butter (or use oil) over medium heat. Add sliced onions and sauté until caramelized and golden brown, around 10-15 minutes.
    • Sprinkle flour over the onions, stirring constantly to create a roux.
    • Gradually add the broth, whisking to combine. Add Worcestershire sauce, thyme, and season with salt and pepper. Simmer until the gravy thickens, about 5 minutes.
  • Serve:
    • Plate a generous portion of mashed potatoes, top with sausages, and ladle the onion gravy over everything. Serve hot and enjoy
