- 1 large onion, chopped
- 2 garlic cloves, minced
- 1 cup chicken broth (use low-sodium for a lighter version)
- 1 cup heavy cream (substitute with coconut cream for a dairy-free version)
- 2 tbsp olive oil or butter
- 1 tsp fresh thyme (or ½ tsp dried thyme)
- Salt and pepper, to taste
- Chopped parsley, for garnish
Instructions
- Preheat oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and cook until browned on all sides. Remove chicken and set aside.
- In the same skillet, add mushrooms, onions, and garlic. Cook until mushrooms release their moisture and onions turn translucent, about 5 minutes.
- Return the chicken to the skillet. Pour in the chicken broth and bring to a simmer, then add the heavy cream and thyme. Season with salt and pepper.
- Transfer everything to a casserole dish (if not using an oven-safe skillet) and cover with foil.
- Bake for 30-35 minutes until the chicken is tender and fully cooked.
- Garnish with chopped parsley and serve hot with mashed potatoes, noodles, or crusty bread.
Notes
For added depth of flavor, try adding a splash of white wine while simmering the broth and cream mixture. This casserole can be made ahead and refrigerated, then reheated in the oven. It also freezes well for easy weeknight meals. For a lighter version, use half-and-half instead of heavy cream.
