Ingredients
Scale
- 4 large portobello mushrooms (4–5 inches wide)
- 1 cup fresh mozzarella cheese, diced (substitute: plant-based mozzarella for dairy-free)
- 1 cup ripe tomatoes, diced (Roma or cherry recommended; substitute: roasted red peppers)
- 1/4 cup fresh basil, chopped (plus more for garnish)
- 1–2 garlic cloves, minced (optional)
- 1 tbsp olive oil (for brushing the mushrooms)
- 1 tsp balsamic glaze (optional; for drizzling)
- Salt and pepper, to taste
Instructions
1. Prepare the Mushrooms
- Preheat your oven to 400°F (200°C).
- Clean the portobello mushrooms by gently wiping with a damp cloth. Remove the stems and scoop out the gills with a spoon to create a cavity for the filling.
2. Make the Filling
- In a mixing bowl, combine diced mozzarella, tomatoes, and chopped basil. Add minced garlic (if using) and season with salt and pepper. Toss gently to mix.
3. Assemble
- Lightly brush the mushroom caps with olive oil on all sides. Place them on a baking sheet lined with parchment paper or a silicone baking mat.
- Evenly distribute the filling into the mushroom caps.
4. Bake
- Bake for 15–20 minutes, or until the mushrooms are tender and the mozzarella is melted and bubbly.
5. Garnish and Serve
- Drizzle with balsamic glaze and garnish with additional fresh basil leaves. Serve warm as a main course or alongside a fresh salad for a lighter option.
