  • 12 garlic cloves, minced (optional)

Instructions

1. Prepare the Mushrooms

  • Preheat your oven to 400°F (200°C).
  • Clean the portobello mushrooms by gently wiping with a damp cloth. Remove the stems and scoop out the gills with a spoon to create a cavity for the filling.

2. Make the Filling

  • In a mixing bowl, combine diced mozzarella, tomatoes, and chopped basil. Add minced garlic (if using) and season with salt and pepper. Toss gently to mix.

3. Assemble

  • Lightly brush the mushroom caps with olive oil on all sides. Place them on a baking sheet lined with parchment paper or a silicone baking mat.
  • Evenly distribute the filling into the mushroom caps.

4. Bake

  • Bake for 15–20 minutes, or until the mushrooms are tender and the mozzarella is melted and bubbly.
