Description

Mary Berry, often referred to as the “Queen of British Baking,” has crafted a brownie recipe that is adored by both novice bakers and seasoned professionals alike. Known for its crispy top and irresistibly fudgy center, this brownie recipe is the ultimate chocolate indulgence. Whether you’re baking for a special occasion or treating yourself, these brownies deliver a perfect balance of rich flavor and texture.

Ingredients

Scale
  • 200g dark chocolate (70% cocoa)
  • 250g unsalted butter
  • 300g caster sugar
  • 3 large eggs
  • 100g plain flour
  • 1 tsp vanilla extract
  • 50g cocoa powder
  • Optional: 100g chopped walnuts or pecans, 1 tbsp strong brewed coffee (to enhance chocolate flavor)

Instructions

  • Preheat the oven: Set the oven to 180°C (160°C fan) or 350°F. Grease and line a 20cm square baking tin with parchment paper.
  • Melt the chocolate and butter: In a heatproof bowl, melt the dark chocolate and butter over a pot of simmering water, stirring occasionally. Once melted and smooth, remove from heat and let it cool slightly.
  • Mix the batter: In a large bowl, whisk the eggs and sugar until pale and frothy. Slowly pour in the cooled chocolate mixture and vanilla extract, stirring gently to combine.
  • Sift in the dry ingredients: Sift the plain flour and cocoa powder into the bowl, folding them into the mixture with a spatula. Be careful not to overmix—this ensures a fudgy texture.
  • Add optional ingredients: If using nuts, coffee, or other add-ins, fold them in gently at this stage.
  • Bake the brownies: Pour the batter into the prepared tin and spread it evenly. Bake for 25-30 minutes. The top should be crisp, but the center slightly soft. Insert a toothpick—if it comes out with moist crumbs, the brownies are done. Avoid overbaking.
  • Cool and serve: Allow the brownies to cool in the tin before cutting into squares. Serve as is or with a scoop of vanilla ice cream or a drizzle of chocolate sauce for added indulgence.

Notes

  • Use high-quality chocolate for the best flavor.
  • Avoid overmixing the batter to keep the brownies dense and fudgy.
  • Keep an eye on the baking time; the center should remain slightly soft for that perfect gooey texture.
